“The Not So Roasted Chicken & A Great Husband”
Long title, huh? Well here’s the story that goes with it… Our next door neighbors just had their first baby, and having been blessed by meals when we had our little ones, we wanted to do the same for them. I have a really, really yummy recipe from Ina Garten for roasted chicken. I bought 2 whole fryer chickens at Costco 2 weeks ago and cooked one and froze the other. I took the frozen one out of the freezer and into the fridge to let it thaw for 2 days before cooking it. When it was time to prepare the chicken I was astonished to find that it was still quite frozen. What to do…with not a lot of time to spare??…I rinsed off the chicken and that seemed to help quite a bit. I got everything ready and popped the bird in the oven to cook for almost 2 hours. The chicken looked wonderful, the house smelled even better-all seemed to go as usual when using this recipe…until I cut into it and realized that it was still not done!…and it was getting closer to 6pm and our neighbors have not eaten a thing yet! As I was freaking out deciding what to do, Rusty calmly came in the kitchen and said he would take over while I fed Caleb. 15 minutes later a yummy angel hair pasta dish was piping hot and ready to be delivered to the new family of 3 who were probably starving by now! What a GREAT husband I have! AND…he has also taken on the amazing task of doing dinner every Sunday night to give me a break and be able to relax! I am SO blessed…and spoiled! =)
No News is…..well, no news
We went to the doctor’s today & still have not had much change with the baby – that means we are now on a plan to go down every 2 days. (which is no fun since it is in Glendale & costs us 20 bucks every time we go for a copay
– It was really funny today, each visit Summer bakes some goodies for Dr Frields & his staff. Today one of the nurses came into the room & said that all of the other nurses & doctors have decided that they are going to do everything in their power to ensure that the baby goes until 44 weeks & that we have daily visits – that way they can ensure that we are back every day with more goodies. Then the receptionist told us that we should be pregnant all the time…….I think it would be cheaper to just FedEx them some cookies every so often.

Visiting Daddy – funny
[Rusty Here] Today Summer & Maddie dropped by work to visit me today – at my work on the day before Halloween, several people dressed up in their outfits & we had a pizza party. They happened to arrive during the pizza party in time for Maddie to see all of the interesting outfits & think that Daddy works at the circus
. However, the kick came after Summer & Maddie left – someone came up to me & said that Summer’s costume was really well done – to which I wondered which costume they meant since she was wearing jeans & a maternity shirt. OH, YOU MEAN SHE’S REALLY PREGNANT?!?! Are you kidding me!! Oh well, it was a laugh for the day & I told Summer to be flattered that someone would look at her from the side & back & think she just stuffed a balloon or something up her shirt
BTW – it is also very nice now to be able to tell people that we’re due on Thursday – less than 7 days to go! WOO HOO! I can only hope that our child isn’t cursed to be born on Halloween, but hey – God only knows!
